I want to put 30 amp circuit in on existing wiring. Can I leave the 50 amp receptacle?

You can leave the existing wiring because there's nothing wrong with using bigger wires, other than the expense (none for you) and the difficulty in working with them.   You should change to a 30 amp breaker and a 30 amp receptacle.  Be very careful working inside the service panel and turn off the power before you start.  If  you don't feel comfortable doing that, call a licensed professional.
