Hello k251461!

You have two options:

1) Traditional stain followed by polyurethane ... you'll have to sand the old finish off all the way down to the wood; or

2) Stain and Polyurethane in one can ... you'll lightly buff sand the existing finish, apply the first coat, then sand and apply again.

Colors are limited in the second option; between eight and twelve depending upon whether you choose MinWax or Varathane.

The first method allows you more color options, but also requires the most labor and time.

Are these cabinets stained now?  If they're raw wood then you can lightly sand, stain, and top coat.

If the cabinets are finished, think about painting.  Seriously.  In order to stain properly you need to strip the wood completely.  Many commercial finishes are resistant to chemical strippers which leaves sanding.  Unless you have slab doors and drawer fronts, it would be almost impossible and extremely time consuming to completely strip the wood by sanding alone.
