Can you replace a drop-in sink with an undermount sink?

If the countertop is laminate (aka Formica) then no.  The substrate, usually particle board, would be visible at the edge of the sink.  If the countertop is solid surface (aka Corian), natural stone, or one of the man-made stone products then possibly.  It would depend on the size of the existing cutout and if there is a sink that would fit that size.  The countertop would likely need to be removed to add the sink as well.
