I'm thinking some metal flashing? And how bout what type of caulk to use?

It sounds like you've already did some research.
Yes metal flashing sounds like a good idea and it will definitely help new trim stay protected from the outdoor elements.
The only problem with the metal flashing it’s that it needs to be painted to prevent rust more maintenance to be done down the road.
If you decide to go with the flashing I would recommend using aluminum instead of metal flashing. Aluminum flashing comes pre-painted and its rust proof. Actually aluminum flashing it’s what is mostly used nowadays for "capping" and flashing. Metal flashing it’s pretty much only used in commercial applications where thicker gauges are needed.

In our stores we carry something called AZEK trim. Azek trim is a PVC product that is impervious to moisture and insects. It comes in various sizes including 1x4s with the cedar grain embossment.

I wouldn’t recommend using caulking -sealants work much better and any of the bellow pictured products are going to provide a durable and long lasting application.
